Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1 tbsp granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1 cup milk
  • 1/2 cup plain Greek yogurt or buttermilk
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tbsp unsalted butter melted
  • 1 cup apple peeled and grated

Instructions
 

  • In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon.
  • In another bowl, whisk together the milk, Greek yogurt, egg, vanilla extract, and melted butter until smooth.
  • Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  • Gently fold in the grated apple.
  • Preheat a griddle or non-stick skillet over medium heat and lightly grease with butter or oil.
  • Scoop 1/4 cup portions of batter onto the griddle, spreading slightly if needed.
  • Cook until bubbles form on the surface and the edges start to set, about 2 minutes.
  • Flip and cook for another 1-2 minutes, or until golden brown.
  • Repeat with the remaining batter.
  • Serve warm with maple syrup, cinnamon sugar, or a sprinkle of chopped nuts.
