- 1 cup chocolate cookie crumbs such as Oreo crumbs
- 3 tbsp unsalted butter melted
- 8 oz cream cheese softened
- 1/2 cup powdered sugar
- 1/4 cup Baileys Irish Cream
- 1 tsp vanilla extract
- 1/2 cup melted dark chocolate
- 1 cup whipped cream for folding into the cheesecake
- 1/4 cup chocolate shavings for garnish
In a mixing bowl, combine the chocolate cookie crumbs with melted butter. Stir until fully combined. Divide the mixture evenly into serving cups and press down to form a crust.
In another mixing bowl, beat the softened cream cheese and powdered sugar until smooth. Add Baileys Irish Cream, vanilla extract, and melted dark chocolate. Mix until fully incorporated.
Gently fold the whipped cream into the cheesecake mixture until light and fluffy.
Spoon the cheesecake filling over the crust in each serving cup, smoothing the tops with a spatula.
