2 cups all-purpose flour 1/4 cup granulated sugar 1 tbsp baking powder 1/2 tsp salt 2 large eggs separated 1 3/4 cups milk 1/2 cup unsalted butter melted 1 tsp vanilla extract
Preheat the Belgian waffle iron according to manufacturer instructions.
In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
In another bowl, whisk the egg yolks, milk, melted butter, and vanilla extract until well combined.
Gradually mix the wet ingredients into the dry ingredients until just combined. Do not overmix.
In a separate bowl, beat the egg whites with an electric mixer until stiff peaks form.
Gently fold the beaten egg whites into the batter, being careful not to deflate them.

Carefully remove the waffle and repeat with the remaining batter.
Serve warm with syrup, fresh fruit, or whipped cream.
