Ingredients
  

  • 1 cup granulated sugar
  • 1/2 cup unsalted butter softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tbsp lemon zest for a fresh flavor
  • 1 cup rice flour
  • 1 cup all-purpose flour
  • 1 tbsp baking powder
  • 1/2 cup milk
  • 1/4 cup sugar for topping muffins

Instructions
 

  • Preheat your oven to 350°F (175°C). Line a muffin tin with parchment paper.
  • In a mixing bowl, beat together the butter and sugar until light and fluffy using an electric mixer.
  • Mix in the eggs, vanilla extract, and lemon zest until well combined.
  • Gradually add rice flour, all-purpose flour, and baking powder. Mix in the milk until the batter is smooth.
  • Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full. Sprinkle the tops with additional sugar.
  • Bake for 20-25 minutes or until the muffins are golden and a toothpick inserted in the center comes out clean.
  • Allow the muffins to cool in the tin for a few minutes before transferring to a wire rack. Serve warm or at room temperature.

  • Storage: Store muffins in an airtight container at room temperature for up to 3 days.
  • Gluten-Free Option: Replace all-purpose flour with a gluten-free baking blend to make the muffins completely gluten-free.
