  • 1 cup granulated sugar
  • 0.25 cup water
  • 0.5 cup heavy cream warm
  • 2 tbsp unsalted butter room temperature
  • 1 tsp vanilla extract optional
  • 0.25 tsp salt optional, for salted caramel

Instructions
 

  • In a saucepan over medium heat, combine sugar and water. Stir until sugar dissolves, then stop stirring and let it cook until it turns a deep amber color.
  • Slowly pour in the warm heavy cream while whisking continuously. The mixture will bubble, so be careful.
  • Remove from heat and stir in butter, vanilla extract, and salt (if using). Mix until smooth.
  • Let the syrup cool slightly before transferring it to a jar. Store in the refrigerator for up to 2 weeks.
