1 cup apple cider reduced to 1/4 cup 1 cup water 4 tbsp unsalted butter cubed 2 tbsp granulated sugar 0.5 tsp salt 1 cup all-purpose flour 1 tsp ground cinnamon 2 large eggs room temperature 4 cups vegetable oil for frying 0.5 cup granulated sugar for coating 1 tsp ground cinnamon for coating
In a saucepan over medium heat, simmer the apple cider until reduced to 1/4 cup. Set aside to cool.
In a separate saucepan, combine water, butter, sugar, salt, and cinnamon. Bring to a boil, then remove from heat.
Stir in the flour until a dough forms and pulls away from the sides of the pan.
Let the dough cool slightly, then mix in the eggs and reduced apple cider until smooth.
Transfer the dough to a piping bag fitted with a star tip.
Heat vegetable oil in a deep fryer to 375°F (190°C).
Pipe 4-inch strips of dough into the oil, frying until golden brown, about 2-3 minutes per side.
Use a slotted spoon to transfer churros to a paper towel-lined baking sheet.
Mix sugar and cinnamon in a bowl, then roll warm churros in the mixture until coated.
