  • 1 cup apple cider reduced to 1/4 cup
  • 1 cup water
  • 4 tbsp unsalted butter cubed
  • 2 tbsp granulated sugar
  • 0.5 tsp salt
  • 1 cup all-purpose flour
  • 1 tsp ground cinnamon
  • 2 large eggs room temperature
  • 4 cups vegetable oil for frying
  • 0.5 cup granulated sugar for coating
  • 1 tsp ground cinnamon for coating

Instructions
 

  • In a saucepan over medium heat, simmer the apple cider until reduced to 1/4 cup. Set aside to cool.
  • In a separate saucepan, combine water, butter, sugar, salt, and cinnamon. Bring to a boil, then remove from heat.
  • Stir in the flour until a dough forms and pulls away from the sides of the pan.
  • Let the dough cool slightly, then mix in the eggs and reduced apple cider until smooth.
  • Transfer the dough to a piping bag fitted with a star tip.
  • Heat vegetable oil in a deep fryer to 375°F (190°C).
  • Pipe 4-inch strips of dough into the oil, frying until golden brown, about 2-3 minutes per side.
  • Use a slotted spoon to transfer churros to a paper towel-lined baking sheet.
  • Mix sugar and cinnamon in a bowl, then roll warm churros in the mixture until coated.
  • Enjoy warm on their own or with caramel sauce for dipping.
