Ingredients
  

  • 1 cup medjool dates pitted
  • 1/2 cup almonds raw
  • 1/4 cup pumpkin seeds
  • 1/4 cup chia seeds
  • 2 tbsp cacao powder
  • 1 tbsp maple syrup or honey
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp sea salt

Instructions
 

  • Add the pitted dates, almonds, pumpkin seeds, chia seeds, cacao powder, maple syrup, vanilla extract, cinnamon, and sea salt to a food processor.
  • Pulse until the mixture forms a sticky dough, scraping down the sides as needed.
  • Scoop out tablespoon-sized portions and roll into balls using your hands.
  • Place the energy balls on a baking sheet and refrigerate for 30 minutes to firm up.
  • Store in an airtight container in the fridge for up to 1 week or freeze for up to 3 months.
