  • 5 high-quality vanilla beans Madagascar for creamy flavor, Tahitian for fruity flavor
  • ½ cup 120ml simple syrup (equal parts sugar and water)
  • 2 tablespoons natural thickener such as corn syrup or glucose

Instructions
 

  • Prepare the Vanilla Beans
  • Slice the vanilla beans lengthwise and scrape out the seeds. Set aside both the seeds and the pods.
  • Combine the Ingredients
  • In a saucepan, mix the simple syrup, natural thickener, vanilla seeds, and pods.
  • Simmer the Mixture
  • Heat the mixture over medium-low heat for 5-8 minutes, stirring occasionally, until the sugar dissolves and the mixture thickens slightly. Avoid boiling to prevent burning.
  • Blend and Strain
  • Remove the vanilla pods and transfer the mixture to a blender or food processor. Blend until smooth. Use a strainer to remove any remaining coarse bits, if desired.
  • Store the Vanilla Bean Paste
  • Pour the smooth paste into a glass jar with an airtight lid. Store in the refrigerator for up to 1 month.

  • This paste can be used as a substitute for vanilla extract in a 1:1 ratio.
