- 1 cup all-purpose flour
- 1/2 cup graham cracker crumbs
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter softened
- 1/2 cup brown sugar packed
- 1 large egg room temperature
- 1 tsp vanilla extract
- 2 cups marshmallow creme for filling
- 12 oz white chocolate chips for coating
- 1 tbsp vegetable oil for smooth chocolate coating
- 1/4 cup colored sprinkles in purple, green, and gold
In a mixing bowl, combine flour, graham cracker crumbs, baking soda, and salt. In another bowl, beat butter and brown sugar until creamy. Mix in egg and vanilla extract. Gradually add the dry ingredients until a dough forms.
Scoop dough into small balls, place on a baking sheet, and flatten slightly. Bake at 350°F (175°C) for 8-10 minutes or until golden brown. Let cool completely.
Spread marshmallow creme onto the flat side of a cookie. Top with another cookie to make a sandwich. Repeat for all cookies.
Melt white chocolate chips with vegetable oil using a double boiler. Dip each cookie sandwich into the chocolate to coat completely. Place on a baking sheet lined with parchment paper.
Sprinkle with colored sprinkles before the chocolate sets. Refrigerate for at least 1 hour to set the chocolate.
