Ingredients
  

  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Instructions
 

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, beat the softened butter and granulated sugar until light and fluffy.
  • Add the egg and vanilla extract, mixing until fully combined.
  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  • Roll out the dough on a lightly floured surface to about 1/4-inch thickness.
  • Use cookie cutters to cut out shapes and place them on the prepared baking sheet.
  • Bake for 8-10 minutes, or until the edges are just lightly golden.
  • Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  • Decorate with icing or sprinkles if desired.
