1 cup white rice rinsed 1 stick cinnamon 3 cups water 1 cup evaporated milk 0.5 cup ube halaya or ube extract 0.5 cup sweetened condensed milk 1 tsp vanilla extract 1 cup ice for serving
In a bowl, combine rinsed white rice, cinnamon stick, and water. Cover and let soak for at least 4 hours or overnight.
Transfer the soaked rice mixture to a blender. Blend on high speed until smooth.
Pour the blended mixture through a fine-mesh strainer into a pitcher to remove solids.
Stir in evaporated milk, ube halaya, condensed milk, and vanilla extract until fully combined.
Pour over ice and serve chilled.
Optional Equipment: A nut milk bag can be used instead of a fine-mesh strainer for a smoother texture.
Customization: Adjust the sweetness by adding more or less condensed milk.
