1 cup water 0.5 cup unsalted butter 1 tbsp sugar 0.5 tsp salt 1 cup all-purpose flour 2 large eggs 0.5 cup mango puree fresh or canned 1 tsp vanilla extract 0.5 cup sugar for coating 1 tsp ground cinnamon for coating
In a medium saucepan, combine water, unsalted butter, sugar, and salt. Bring to a boil over medium heat.
Remove the saucepan from heat and stir in the flour all at once. Mix until the dough forms a smooth ball.
Allow the dough to cool slightly. Beat in the eggs one at a time until fully incorporated. Stir in the mango puree and vanilla extract.
Heat oil in a deep fryer or skillet to 360°F (180°C).
Transfer the dough to a piping bag fitted with a star-shaped tip. Pipe 4-6 inch lengths of dough into the hot oil, cutting the ends with scissors.
Fry the churros in batches until golden brown, about 2-3 minutes per side. Remove with a slotted spoon and drain on paper towels.
In a shallow bowl, mix the sugar and ground cinnamon. Roll the warm churros in the mixture until well coated.
